Lancashire meat and potato pie



Ingredients:
pie dough
1 pie dish
1 pound beef (small cubes)
2 russet potatoes(small cubes)
1 medium onion- chopped
1 small can beef stock
some flour- to coat the beef
oil
1 tsp sugar
S&P to taste

PIE DOUGH
1 cup all purpose flour
1/4 cup & 2 tbsp butter
1/4 cup very cold water
a pinch of salt

Mix flour, salt and butter by hand, dont over mixed.
add cold water by half then mix add more water if necessary, dont over mixed the dough, put in the fridge for 1 hour.

FILLING:

Dredge the beef cubes in flour, set aside, meanwhile put some vegetables oil in a frying pan, add your beef until golden brown, no need to cook thoroughly. Remove from pan and use paper towel to remove excess oil. Add onion cook until brown.Add beef and beef broth. Cook for 1 hour or until beef is tender, add potatoes and cook for another hour, if not thick enough mashed some potato in the beef mixture or add more flour. cut your pie dough into two for base and top, using your rolling pin, enough for your pie tin. add beef mixture and cover with another dough. make a hole in the center of the pie and bake for 35 - 45 min. or until golden brown. bake for 350F.

chicken and italian sausages with red wine


Ingredients:

10 pieces thighs- remove skin
5 italian sausages
3 large carrots
10 small or baby potatoes
1 cup red wine
1/2 cup orange juice
1 small can chicken stock
1 tsp paprika
4 garlic
1 large onion
2 bay leaves
1 tbsp. soy sauce
1/2 tsp. salt
pepper

Brown each side of chicken in a frying pan. Remove for later use. Brown italian sausages and cut half. set aside. fry onion and garlic. set aside for later use, meanwhile, in large baking dish arrange chicken first, then sausages, sprinkle garlic, onion, paprika salt and pepper, add your veggies like carrots and baby potatoes. add wine, orange juice, chicken stock and soy sauce. cover with alluminum and bake for 400 F for at least 2 hours. this recipes is all in one dish coz vegetables and carb with meat in one dish. while baking it you can do some your chores while baking it. enjoy!!!

Rice wrap stuffed with longaniza or tocino


Ingredients:

4 cups glutinous rice
1 cup black rice (if desired)
1/2 cup of vegetable oil
1/2 cup of soy sauce
1 chopped garlic
2 pack of tocino or longanisa (cut enough for stuffing)
banana leaves or bamboo leaves
string
S&P to taste


Wash an soak your banana leave or bamboo leaves in boiling water for at least an hour.
Meantime, wash and soak your rice in vegetable oil, soy sauce, garlic, salt & pepper for at least 4 hours or overnight, Adjust the taste and ready to wrap. Fold your banana leaves and put your rice and stuffed in with longanisa or tocino. Cook for at least 4hours in medium heat or until the rice cook.

Garbanzos Salad


Ingredients:
3 cups garbanzos
1 small cubes apple
1 cup soaked raisins
1 lemon
2 tsp. honey
1 1/2 tsp curry powder
1 tsp. cumin
1 green or yellow bell pepper ( small cubes)
a small amount of olive oil
2 tsp. of chopped mint or rosemary
1/2 medium onion (chopped) or you can use spring onion
S & P to taste

Soak at least an hour or overnight and boil Garbanzo in a big pan until tender. Garbanzo in a tin will do. set aside.
Make a dressing, combine olive oil, lemon, honey, curry powder, cumin, chopped mint or chopped rosemary, and S& P to taste. set aside.
Meanwhile, combine garbanzos, apple, bell pepper, raisins,and onion in a big bowl.
add your dressing and mix until combine. put in a fridge for at least an hour of serving.

Banana Bread


Ingredients:
3 large bananas
2 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp salt
1 cup walnuts
I cup raisins
1 lemon and zest
2 large eggs
3/4 cup white sugar
1/2 cup milk
1/2 cup vegetables oil
1 tsp vanilla

Preheat oven to 359F and grease loaf tin.
Mask bananas set aside for later use.
Combine flour,baking powder, baking soda,salt and walnuts.(omit the walnuts if you dont have) set aside.
In a medium mixing bowl mix vegetable oil, sugar and eggs beat until combine. add lemon juice, zest and vanilla. Add flour mixture alternately with milk. blend until smooth and well blended. Add mask bananas with wooden spoon until combine. Remember dont over mix.Bake until nicely brown or tooth pick inserted in should come out clean.

Brownies


Ingredients:

3/4 cup butter
1 1/4 cups sugar
1/2 cup unsweetened cocoa powder
2 eggs
1 tsp. vanilla
1 1/2 cups of all- purpose flour
1 tsp. baking powder
1/4 tsp baking soda
1 cup milk
1 cup chopped peanuts

Grease baking pan set aside. melt butter in a medium sauce pan over medium heat.
Stir in sugar and cocoa powder until combined.
Add egss and vanilla beats until combined
In a small bowl combine flour, baking soda, baking powder and add flour mixtures and milk alternately to chocolate mixtures , beating after each addition.
Pour batter into prepared baking pan and top peanuts bake in 350F for 15 mins or until the wooden toohpick inserted near the center comes out clean. frost if desired.

Frosting:
1/2 cup cocoa powder
2 tbsp. butter or margarine
1/4 cup of icing sugar- 3 tbsp.white sugar is alternative
1/4 cup hot water or milk

Combine all together with wooden spoon. mix until combined add hot water if very thick.

blueberry muffins


Ingredients:

2 cups all purpose flour
1/4 cup wheat germ
1 tsp baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups blueberries
1 lemon ( juice and zest)
2 large eggs (room temperature)
3/4 cup sugar
1/2 cup vegetable oil
1/2 cup milk
1 tsp vanilla
1/4 tsp salt

Reheat oven for 250F. Grease muffin tins.
Medium mixing bowl, combine flour, wheat germ, baking soda, baking powder, and salt.
set aside. In a another mixing bowl beat your vegetable oil and sugar until mixed add in eggs, lemon juice, zest and vanilla. Add flour mixture and milk dont over mixed. Add blueberries and mix until combine.
Spoon batter to prepared baking tins and bake until nicely brown. Toothpick inserted in until should come out clean.

Best carrot cake


Ingredients:

2 cups all purpose flour
1 1/2 cups sugar
4 beaten eggs- room temperature
2 tsp baking powder
1 tsp. ground cinnamon
1/2 tsp baking soda
3 cups finely sheredded carrots
1 lemon ( zest and the juice)
3/4 cooking oil
1 cup cream cheese
1/4 cup butter
1/2 cup icing sugar
Chopped pecans or walnuts


In a mixing bowl stir flour, sugar, baking powder, baking soda and cinnamon. Set aside.
In a medium bowl combine eggs, Lemon juice and oil until well combine add shredded carrots and lemon zest.
Add flour into eggs mixtures . Stir until combined. Pour batter into the prepared pans.Bake in a 350F oven for 30 to 35 mins.

Cheese frosting:

Mix cream cheese, butter and icing sugar until combine. Frost top and side with cream cheese and sprinkle chopped pecans.

stuffed french toast


Ingredients:
1 loaf of bread
2 cups of cream cheese
1/2 cup blueberry or strawberry jam
5 eggs
1/2 cup milk
1 tsp. cinnamon
pancake syrup
1/4 cup chopped walnuts for toppings
some butter

Mix cream cheese with blueberry or strawberry jam, set aside. Beat eggs until combine. add vanilla , cinnamon and milk, set aside for later use. Stuff bread with cream and jam mixtures. (like you are making sandwich. Dredge to your egg mixture and pan fry with little butter until brown both side. Transfer to a baking tray and bake for 15 min. drizzle with syrup and top with chopped walnuts.

Home- made noodle soup ( miki ligis of Dumangas)


Ingredients:

3 cups all purpose flour
2 1/2 cups of cold water
a pinch of Salt to taste
1 lb. prawns or shrimp
8 cups of chicken stock ( if using water add chicken cubes)
4 lb. of pork with a little fat
1 onion
3 cloves garlic
2 tsp. atchuete powder ( estiwites)
shrimp skin juice (using morter and pestle)
vegetable oil
Salt & pepper
fried garlic for garnish

Flour, water and salt in a mixing bowl knead well until smooth and elastic. Add flour if necessary. This mixtures look like pizza dough. On a very lightly floured surface, roll out your dough into a thin round, fold and cut like a flat noodles. set aside for 15 - 30 mins.
In a large pot heat the oil and smoother the garlic and onion (leave some for later use)add your shrimp, dont over cook. Remove from the pan set aside for later use. A little oil in a big pot add in garlic and onion until caramelize add pork saute until brown, add atchuete and stir add chicken stock and shrimp juice cook until the pork tender add your homemade noodles (if you like thick soup add less water) cook until your noodles are soft.

Ratatouille - mixed vegetables stew (french style)


Ingredients!

2-4 yellow and green zucchini
2 eggplant
2 yellow and green bell pepper
1 onion
1 tbsp. olive oil or veg. oil
1 cup of tomato sauce
2 bay leaves
1 cup chicken stock
2 cloves of garlic
1/2 tsp. thyme
some oregano and basil
Salt & pepper to taste

Saute each vegetables Like succhini, bell pepper and eggplant and remove in a pan. Combine the sauteed vegetables and remaining ingredients in braising pan. Bring to a simmer on the stove, Cover and cook until the flavour develop.

Cabbage Atchara ( Pickled Cabbage) Phils. Stlye


Ingredients:


1 Medium Cabbage

2 medium Carrots

1 cup beans

1 red or yellow bell pepper

1 onion

2 jalopeno pepper

2 - 3 glove of garlic

1/4 cup of ginger

1/4 cup of brown sugar

1 tsp salt

1 cup white vinegar

2 tsp turmeric

spring onion for garnish


Cut all vegetables into juliene. Boil the white vinegar into a sauce pan add salt, turmeric and sugar, Boil and add all your vegetables. stir and cook for 15 minutes.

Fruits parfait with cereal ( breakfast)


Ingredients:

1 cup blueberries
1 cup strawberries
1 apple cubes
any fruits that you like
some yogourt
1 tsp. mint
your favourite cereal
some lemon juice

Mix all the fruits in a bowl. Add lemon juice and mint. Blend together by stirring.
put the fruits mix in a glass or bowl . Top the fruits mix with yogourt and add your favourite cereal on top.

This is good for breakfast! Instead of cereal you can use ground flazseed for healthy alternative.

Bread Pudding with Orange Sauce



Preheat oven to 350F

Ings:

6 cups french bread

1 cup raisins

3 eggs

1 can condensed milk

2 1/2 warm milk

1/4 butter melted

1 tbsp. grated orange zest

1 tsp vanilla

1 tsp cinnamon

1/4 tsp salt


Sauce

1 cup orange juice

1/2 granulated sugar

1 1/2 cornstarch


Place bread and raisins in a large bowl.

Combine remaining ingredients in a separate bowl, add to a bread and raisins mixture. Stir to combine Pour into baking dish or you can use your muffin baking dish.

Bake for 40 mins. or until knife inserted in centre comes out clean.

Sauce: combine orange juice and sugar in a sauce pan cook over medium heat until reduced for 1/3 cup and add cornstarch. Serve over warm bread pudding.

Lemon Triangles


6 tbsp. butter

1/4 cup icing sugar

1 cup + 3 tbsp. flour

3 eggs

1 cup white sugar

1/4 cup lemon juice

1 tbsp finely grated lemon peel

some icing sugar for garnish

1/2 cup whipping cream



Preheat oven to 350 F

Butter, icing sugar and 1 cup flour in a bowl mix with your hands or food processor until combine.

Pat dough evenly into the bottom of 9 inch pie plate and bake for 12 - 15 minutes ( lightly brown)

Combine eggs, sugar, lemon juice lemon peel and 3 tbsp flour, whip until well mixed.

Pour over hot crust and bake for 15 - 20 mins. or until firm and cool.

Cut into triangles and sprinkle with icing sugar and put a whipped cream or any slices of fruits.
