stuffed french toast


Ingredients:
1 loaf of bread
2 cups of cream cheese
1/2 cup blueberry or strawberry jam
5 eggs
1/2 cup milk
1 tsp. cinnamon
pancake syrup
1/4 cup chopped walnuts for toppings
some butter

Mix cream cheese with blueberry or strawberry jam, set aside. Beat eggs until combine. add vanilla , cinnamon and milk, set aside for later use. Stuff bread with cream and jam mixtures. (like you are making sandwich. Dredge to your egg mixture and pan fry with little butter until brown both side. Transfer to a baking tray and bake for 15 min. drizzle with syrup and top with chopped walnuts.

Home- made noodle soup ( miki ligis of Dumangas)


Ingredients:

3 cups all purpose flour
2 1/2 cups of cold water
a pinch of Salt to taste
1 lb. prawns or shrimp
8 cups of chicken stock ( if using water add chicken cubes)
4 lb. of pork with a little fat
1 onion
3 cloves garlic
2 tsp. atchuete powder ( estiwites)
shrimp skin juice (using morter and pestle)
vegetable oil
Salt & pepper
fried garlic for garnish

Flour, water and salt in a mixing bowl knead well until smooth and elastic. Add flour if necessary. This mixtures look like pizza dough. On a very lightly floured surface, roll out your dough into a thin round, fold and cut like a flat noodles. set aside for 15 - 30 mins.
In a large pot heat the oil and smoother the garlic and onion (leave some for later use)add your shrimp, dont over cook. Remove from the pan set aside for later use. A little oil in a big pot add in garlic and onion until caramelize add pork saute until brown, add atchuete and stir add chicken stock and shrimp juice cook until the pork tender add your homemade noodles (if you like thick soup add less water) cook until your noodles are soft.

Ratatouille - mixed vegetables stew (french style)


Ingredients!

2-4 yellow and green zucchini
2 eggplant
2 yellow and green bell pepper
1 onion
1 tbsp. olive oil or veg. oil
1 cup of tomato sauce
2 bay leaves
1 cup chicken stock
2 cloves of garlic
1/2 tsp. thyme
some oregano and basil
Salt & pepper to taste

Saute each vegetables Like succhini, bell pepper and eggplant and remove in a pan. Combine the sauteed vegetables and remaining ingredients in braising pan. Bring to a simmer on the stove, Cover and cook until the flavour develop.

Cabbage Atchara ( Pickled Cabbage) Phils. Stlye


Ingredients:


1 Medium Cabbage

2 medium Carrots

1 cup beans

1 red or yellow bell pepper

1 onion

2 jalopeno pepper

2 - 3 glove of garlic

1/4 cup of ginger

1/4 cup of brown sugar

1 tsp salt

1 cup white vinegar

2 tsp turmeric

spring onion for garnish


Cut all vegetables into juliene. Boil the white vinegar into a sauce pan add salt, turmeric and sugar, Boil and add all your vegetables. stir and cook for 15 minutes.

Fruits parfait with cereal ( breakfast)


Ingredients:

1 cup blueberries
1 cup strawberries
1 apple cubes
any fruits that you like
some yogourt
1 tsp. mint
your favourite cereal
some lemon juice

Mix all the fruits in a bowl. Add lemon juice and mint. Blend together by stirring.
put the fruits mix in a glass or bowl . Top the fruits mix with yogourt and add your favourite cereal on top.

This is good for breakfast! Instead of cereal you can use ground flazseed for healthy alternative.

Bread Pudding with Orange Sauce



Preheat oven to 350F

Ings:

6 cups french bread

1 cup raisins

3 eggs

1 can condensed milk

2 1/2 warm milk

1/4 butter melted

1 tbsp. grated orange zest

1 tsp vanilla

1 tsp cinnamon

1/4 tsp salt


Sauce

1 cup orange juice

1/2 granulated sugar

1 1/2 cornstarch


Place bread and raisins in a large bowl.

Combine remaining ingredients in a separate bowl, add to a bread and raisins mixture. Stir to combine Pour into baking dish or you can use your muffin baking dish.

Bake for 40 mins. or until knife inserted in centre comes out clean.

Sauce: combine orange juice and sugar in a sauce pan cook over medium heat until reduced for 1/3 cup and add cornstarch. Serve over warm bread pudding.

Lemon Triangles


6 tbsp. butter

1/4 cup icing sugar

1 cup + 3 tbsp. flour

3 eggs

1 cup white sugar

1/4 cup lemon juice

1 tbsp finely grated lemon peel

some icing sugar for garnish

1/2 cup whipping cream



Preheat oven to 350 F

Butter, icing sugar and 1 cup flour in a bowl mix with your hands or food processor until combine.

Pat dough evenly into the bottom of 9 inch pie plate and bake for 12 - 15 minutes ( lightly brown)

Combine eggs, sugar, lemon juice lemon peel and 3 tbsp flour, whip until well mixed.

Pour over hot crust and bake for 15 - 20 mins. or until firm and cool.

Cut into triangles and sprinkle with icing sugar and put a whipped cream or any slices of fruits.
